Grapes were harvested early in the season while the natural grape sugar was at a low level, to achieve the desired alcohol of 9.5%. Methods in the vineyard such as canopy size reduction and fruit exposure allowed the fruit to be harvested at low brix with good acid balance.
After clarification, the individual vineyard parcels were fermented at cool temperatures using selected yeast strains. After fermentation the young wines
were racked off yeast lees, followed by blending and stabilisation. We stopped the fermentation before all of the grape sugars were converted to alcohol, further reducing the final alcohol and leaving some residual sweetness.
