The palate is fresh with citrus and passionfruit flavours and balanced with a crisp, refreshing finish. Shows notes of grapefruit pith and passionfruit, with a herbal lift.
We selected and harvested two parcels of Sauvignon Blanc from vineyards in the lower Wairau Valley to make this wine. The fruit was de-stemmed and gently pressed. The juice was cold settled for 72 hours, after which the clear juice was racked off , followed by a long cool fermentation in stainless steel to capture and enhance the natural fruit flavours. The parcel was then stabilised, filtered and bottled.
